Mango Salsa


This mango salsa compliments fish beautifully. Its fresh, tantalising flavours creates a delicious meal that needs only a green salad to complete it.
Sorry about the photo, taken by hubby! Wasn't prepared for a photo shoot. A crisp white would have looked more appropriate in the background! 
Ingredients.
One large mango chopped
1 tbl of finely chopped mint
1 tbl of finely chopped coriander 
A sprinkle of chopped red chili (to your liking)
1 small Spanish onion chopped finely
The juice of a lime mixed with a tbl of brown sugar until dissolved. 

Method
Toss the ingredients in a bowl and spoon over your favourite grilled, baked or barbecued fish. 
Serves 4
